Hey everyone, it’s been a while! Today, I decided to take things up a notch and dive into the world of food blogging (yes, it's exciting!). After sharing my spaghetti recipe and receiving rave reviews on my Snapchat, I’m thrilled to bring you a convoluted and irresistible take on my version of spaghetti stir-fry.
My goal is to appeal to your senses—especially your sense of smell and taste—so you can truly savor every bite. Let’s get started with the ingredients you’ll need:
- Spaghetti
- A variety of vegetables (I used carrots, green bell peppers, spring onions, onions, and cucumber)
- Corned beef
- Baked beans (optional—I usually add them, but not today)
- Ground pepper (Kivo is a great choice)
- Your preferred spices (I recommend Remie spaghetti spice)
- Soy sauce
- Eggs
- Sausages (or any protein of your choice)
This mix of flavors and textures will create a dish that’s not only delicious but also visually appealing. Follow along as I guide you through the process of making this mouthwatering spaghetti stir-fry. Let's get cooking!
First, bring a pot of water to a boil. Once boiling, add a few drops of oil and a pinch of salt, then add your spaghetti. Unfortunately, the cooking process of the spaghetti isn’t shown in the video attached below, but I'll walk you through it here.
While the spaghetti is boiling, wash your vegetables. Use this time to chop your veggies—I like to remove the seeds from the cucumber, but that's optional. Be careful not to overcook the spaghetti; let it reach a slightly firm texture. Once cooked, drain the spaghetti and rinse it with cold water. Add a little butter to the spaghetti—this underrated ingredient enhances the flavor significantly in most foods.
Next, heat some oil in a pan and start by frying your chopped sausages. Fry them to your preferred crispiness—I like mine a bit crispy, almost like chips, which also makes a great substitute in salads when I’m out of cabbage.
After the sausages are done, fry your vegetables. I add a bit of pepper and spaghetti spice to enhance the flavor. I hold off on the spring onions initially due to their softness, starting instead with the bell peppers, onions, green peppers, cucumbers, and carrots. Let the carrots and cucumbers cook for a few minutes before adding the rest. Once the veggies are tender, remove them from the pan.
Now, beat your eggs (I used three, but you can adjust according to your preference). Mix in some of the sausages and corned beef, along with spices, ground pepper, and salt. Whisk the mixture well, then fry it, letting it cook for a few minutes before flaking it into pieces.
With the veggies and eggs prepared, it's time to fry the spaghetti. This final fry completes the cooking process started by boiling. Add pepper, spices, and soy sauce to the spaghetti and mix well—the soy sauce not only adds a rich flavor but also gives the dish a lovely color, thanks to its vitamins, lipids, and proteins.
Combine the spaghetti with the sausages, vegetables, eggs, and corned beef, reserving some for garnishing. Cook everything together for a few minutes, then garnish with the remaining proteins and vegetables.
